Zucchini Basil Hummus
So our 3 year-old was being “helpful” and weeded our basil plant, resulting in an early harvesting of daddy’s precious basil. Oops! But, when life gives you basil, you create a delicious recipe for Zucchini Basil Hummus. Enjoy!
1 large organic zucchini, chopped
1 c garbanzo beans, cooked or canned, drained, and rinsed
1/2 c tahini
1 c fresh organic basil
1/4 c nutritional yeast
1/4 c pine nuts
1/4 c lemon juice
4 garlic cloves
1 t pepper
Place ingredients in food processor and blend until smooth. Enjoy with fresh veggies or as a spread on wraps or sandwiches.
